- {Make ready 1 Tbsp of red chilli sauce.
- {Prepare Half of a tsp of Red chilli flakes.
- {Make ready 2 tsp of Lemon juice.
- {Prepare As per taste of Salt.
- {Get as required of Water for cooking.
Steps to make Spicy Chicken Noodles:
- Take 6 cups of water in a cooking pot and bring it into rolling boil. Add 450g of noodles and cook for 4 minutes. Drain the excess water in a colander and toss it with 2 tsp of cooking oil to avoid sticking and keep it aside..
- For preparing shredded chicken, take 1 tbsp of cooking oil in a pan on medium flame. Place the cleaned chicken breast pieces & add 1tsp of black pepper powder, half tsp of salt and a pinch of turmeric powder. Fry for a min and toss it over and fry for another 30 secs. Add 300 ml of water and allow it to boil. Simmer the flame and cook it for another 5 to 7 minutes. Remove the pieces on a plate and retain the chicken broth for cooking..
- Take a fork and shred the chicken and set it aside..
- Optional: For preparing scrambled eggs, whisk 2 eggs along with 1 tsp of pepper powder and a pinch of salt. Heat a pan, add 1 tbsp of cooking oil and pour the contents to the pan. Scramble it with a spatula and set it aside..
- Finally, keep a heavy bottom pan or wok on high flame. Add 2 tbsp of sesame oil and stir fry chopped garlic, ginger, spring onions bulbs (white part), green chilli and carrot one after the other and toss for 2 min. Do not overcook the vegetables. Add the scrambled eggs and shredded chicken and toss it well. Add 2 tbsp of soya sauce, 1 tbsp of red chilli sauce and mix well..
- At this stage, add the retained chicken broth and cook for 30 secs. Adjust the flame to medium & add the precooked noodles and toss it well along with half a tsp of red chilli flakes. Squeeze in half a lemon juice and toss it again for 10 secs..
- Switch off the flame & garnish with spring onion greens and serve it hot..
