Steps to make Cabbage Masala Omelette:

  1. First up: Wash & finely chop the cabbage- set aside, wash, clean & finely grate the potatoes- set aside.
  2. Chop rest of the aforementioned veggies & keep other ingredients handy & readily available.
  3. Break open the eggs, add in the dry herbs & spices, seasonings & whisk well with a balloon whisker until frothy.
  4. Heat up a frying pan over the medium flame: Add in the oil & butter both together- Add in the chopped cabbage, green peas & grated potatoes, sauté until it’s reduced in its volume a bit.
  5. Add in the salt at this point, cover & sauté for about 5 mins over the low-medium flame, stirring occasionally in between, once cooked about 70% add in the whisked eggs to it....
  6. Spread it all along the pan, so as to spread it evenly all along the sautéed veggies mixture & continue to cook over the low flame with the lid on for the next 7-8 mins time, checking in between & adding in the cheese (whichever using), now.
  7. Once done with one side, flip over gently onto its other side by placing a plate/dish on its top & flip carefully & quickly (turn off the flame at this point, to avoid any accidents) & the same way cook this side too, for another 5-6 mins time with the lid on....
  8. Turn off the flame, let it sit on the oven for another 2-3 mins & then serve it hot by cutting its pieces as per your own choice & with your own favourite hot/cold beverages....ENJOY, the SPECIAL CABBAGE OMELETTE.
